1 potato
a dash of salt and pepper
1 tsp margarine
1 tbsp. milk
1/4 cup grated cheddar cheese
Directions:
Scrub the potatoes to remove all dirt and remove eyes if necessary. Do not peel the potatoes, but pierce the skin with a fork about four times. Arrange the potatoes in a circle in the microwave and cook on high power. Make sure you turn the potatoes over part way through the cooking time.
Cooking Time: *Cooking time will vary with the size of the potato*
1 potato - 3-4 minutes
2 potatoes - 6 minutes
3 potatoes - 10 minutes
4 potatoes - 14 minutes
Let the potatoes stand for 5 minutes
When the potatoes are baked and the 5 minute standing time has lapsed, turn on the broiler on the oven. Slice the top off each potato. With a spoon, scoop out the center of each potato, leaving 5 mm of potato around the shell. Place the scooped out potato into a bowl and add the ingredients listed above.
Stir the ingredients to combine until theya re the consistency of mashed potatoes, then refill the potato shell with the mixture, mounding if necessary. Place the potatoes on a cookie sheet and place under the broiler. Broil until the cheese is melted and the tops are nicely browned (Approximately 5 minutes, but keep an eye on them.)

You may want to save some of the cheese for the top to make it look pretty.
You can add leftover ham or precooked bacon for added flavor.
Serve with sour cream.
